Colorado Farm-Raised Striper Recipe Wins Seafood Competition

Just how good is aquaculture striped bass compared to other available seafood options? It’s the best according to a panel of experts who chose Vail, Colorado Chef Paul Anders’ farm-raised striped bass as the winner among the field of seafood preparations by 16 world-class chefs on “Masterpiece Day” of the Great American Seafood Cook Off held recently at the 5th annual
Louisiana Seafood Expo. On day two of the competition, entries were geared more to home cooking, and Anders' Colorado farm-raised fish dish was judged in 4th place., still a remarkable showing for an aquaculture product in an event sponsored by the National Marine Fisheries Service.
While all of the entries were supposed to be based on sustainable seafoods, we couldn’t help but notice that other entries included Chesapeake blue claw crab, Louisiana redfish, North Carolina spotted sea trout, Texas jumbo shrimp, and Alaskan salmon. These are all fisheries whose stocks are significantly depleted or that have bycatch or other negative issues. There was no mention made of any of those issues, but, of course, the event is sponsored primarily by the wild commercial fishing industry and the managers of those fisheries (NMFS)
